Today I am a very proud mother – my son is 14! I think this will be the last year he is shorter than me and his new shoes are already bigger than mine!
Even though he is another year older and wiser
and knows everything there is to know about everything some things never change and he has to have a birthday cake. With exams looming and no party for 2 weeks, he decided to postpone his usual cake til the “boys’ weekend” and have a lemon drizzle cake instead. I don’t know if it’s peculiarly English, but here is the recipe for it in case you want to have a go at it yourself!
Lemon Drizzle Cake.
3 large eggs
175g self raising flour
175g butter (at room temperature)
175g caster sugar
1.5 tsp baking powder
zest of 1 lemon.
for the drizzle;
100g caster sugar
juice 1 lemon
450g loaf tin, greased and lined.
Preheat the oven to 180ºC/350ºF/Gas Mark 4.
Beat together the eggs, flour, caster sugar, butter, baking powder and lemon zest until smooth in a large mixing bowl and turn into the prepared tin.
Bake in the pre-heated oven for about 35 mins, or until golden brown, shrinking away from the sides of the tin and springy to the touch.
While the cake is still warm, make the lemon drizzle topping. Mix together the sugar and lemon juice, and pour over the warm cake.
Leave to cool a little and loosen the sides of the cake, then lift the cake out of the tin.
